you substitute for that little white sweet Saboteur? Coconut milk! Yes,
interestingly enough, the saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat! Therefore, even though it’s high in saturated fat, coconut can aid in weight loss! Half the medium-chain fatty acids in coconut milk are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut milk can help boost the immune system.
Coconut milk, not to be confused with coconut water, is obtained
by passing hot water or milk through grated coconut, whichextracts the oil and
aromatic compounds. It has a fat content around 17%. Onetbsp. of coconut milk

2 cups of pineapple cut into 1-inch cubes
1 cup coconut milk
1 cup crushed ice
2 tablespoons chilled
1 1/2 tablespoons
1 tablespoon honey
2-3 teaspoons lime
Freeze pineapple on a dish, covered, at least 3 hours or
overnight. Puree pineapple with coconut milk, ice, seltzer, mint, honey and
lime juice to taste in a blender, scraping down sides of blender, until smooth.
Immediately serve in two chilled glasses with a fresh mint sprig.
